Okroshka (Cold Russian Summer Soup)

3 medium cucumbers

dill

green onion (to taste)

10 Radishes

2 Apples

1.5 cups Latta Plain Kefir (Original, 2% fat, or 0% fat)

Mustard, salt to taste

Thinly sliced fennel

 

Chop apples, cucumbers, and radishes. Add salt, mustard, thinly sliced fennel, and onion. Stir and expand in a bowl. Pour in Kefir. In Russia, this is refreshing cold soup commonly eaten in the summer.
